Biskut Cornflakes Rangup - Crunchy cornflakes goodness

Forget about cornflakes with milk, how about cornflakes with this biskut instead?


Biskut Cornflakes Rangup

Ingredients (Yields about 100 pieces)

1. 350g self-raising flour
2. 230g soft butter
3. 1 cup fine sugar
4. 4 eggs
5. 230g cornflakes, lightly crushed
6. 120g raisins or sultanas, each cut into halves


1. In a bowl, beat butter and sugar together until creamy.
2. Add eggs one at a time, alternating with a tablespoon of flour in order to avoid the egg mixture from curdling.
3. Add in raisins and cornflakes. Mix well before adding flour a little at a time.
4. Shape dough into small balls. Arrange on a lined baking tray.
5. Bake for 15 minutes at 160°C or until golden brown. Leave to cool completely before storing in an airtight tin lined with pergament paper between layers.
